Deborah Vogts's Buffalo Chip Cookies
2 cups butter, melted
2 cups brown sugar
2 cups sugar
4 eggs
2 teaspoons vanilla
4 cups flour
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
2 cups quick oatmeal
2 cups crushed cornflakes
1 cup raisins
1 cup chopped pecans
1 cup coconut
Preheat oven to 350 degrees. In large bowl, cream butter, sugars, eggs and vanilla. In separate bowl mix flour, salt, baking soda, baking powder. Add to creamed mixture. Add oatmeal and cornflakes, and then last three ingredients.
Drop by tablespoons onto greased cookie sheets and bake for 10-12 minutes
at 350 degrees F till golden. Makes 5-6 dozen. Very good chewy cookie.
