Odd Recipes from Cool Writers

Smashed Bunny Cookies

1/2 cup butter
1/2 cup packed brown sugar
1/2 cup white sugar
1 tsp vanilla
1/2 tsp salt
1/3 cup cocoa
1 large egg
1/2 tsp baking soda
1 cup flour
1 cup white chocolate chunks (i.e. white Easter Bunnies)

The day after Easter, go buy a bunch of White Chocolate Bunnies because they're all on for half price, and smash them up into chip-size pieces. An alternate would be paying a fortune for white chocolate at Purdies, or buy the multi-colored chocolate melting wafers, but don't melt them, smash them up into chip-size pieces. They make 'rainbow' cookies and it's quite attractive.

In large bowl combine butter, both sugars, vanilla, and salt. Cream until fluffy. Beat in cocoa, egg, and baking soda. Stir in flour and smashed bunnies. Drop by rounded tablespoonfuls on greased baking sheet, well apart. Bake at 325 for about 14-16 minutes, or less, depending on the size of your cookies. DO NOT OVERBAKE or cookies will be dried out. Cool slightly on cookie sheets, as they will be very soft, then transfer to racks. Makes 16-18 cookies.
