Cyndy Salzmann's Groundhog Stew
We serve this on Groundhog Day at our house. It’s from my holiday book "Beyond Groundhogs and Gobblers: Putting Meaning into your Holiday Celebrations." (Christian Publications, 2004) 

1 lb. lean hamburger
1/2 cup chopped onions
2 teaspoons chopped garlic
1 16-oz bag frozen mixed vegetables
1 16-oz can chopped tomatoes (undrained)
1 16-oz can kidney beans (drained)
1 cup vegetable juice (V-8, etc.)
1 teaspoon  EACH oregano, marjoram, thyme, and sugar

Brown hamburger with garlic and onions until fully cooked.  Drain any accumulated grease.  Add remaining ingredients and simmer 30-45 minutes.  Add salt and pepper to taste.  Serve with crusty bread and a salad.  (Note be sure to keep proof that the meat in the stew is not truly “groundhog” or your family may boycott dinner…)
