Pickle Soup for the Soul
This is Sharon's Russian Granny's awesome recipe.
Saute' a few onions in butter.
Add chicken stock (about 8 cups or whatever you have on hand )
Add fully browned/cooked meatballs (I cheat and buy them frozen, but Granny always rolled them by hand)
Add Cream of chicken soup mix packet and/or other thickeners
Add potatoes cut up and half-boiled
Add peppercorns and bay leaves
(NOTE: ALWAYS COUNT THE PEPPERCORNS AND BAY LEAVES so you can remove them all before serving.)
Simmer all day in a slow-cooker.
Serve with chopped pickles and sour cream. Yes, I'm serious. That's what makes the soup so
amazing!
